How much does the oven weigh?
The oven weighs approximately 1,000 lbs.
How much space is required?
The oven only requires an area that is 5 foot by 5 foot.
Does the oven require a hood?
No. The oven has an internal plenum and is equipped with an evacuation blower together with a frontal air curtain which captures virtually all extraneous heat and exhaust gasses which are expelled to the out of doors via the flue. Unlike traditional ovens that require a standard hood, the Millennium's built in hood does not remove your air conditioning out of your establishment saving you thousands of additional dollars per year.
How much does it cost to run the oven?
The Millennium only requires 50,000 Btu's to get to temperature and once there, (due to our unique stay hot deck) can be backed down to just 25,000 Btu's for continuous cooking. In layman terms, the oven only costs approximately .25 to .50 cents an hour to run.
How much does it cost to run a double stack deck oven?
A double stack deck oven takes approximately 250,000 Btu's to cook continuously and can only produce 1/5th of the production capabilities of the Millennium. This means that is costs approximately $2 to $2.50 an hour to run the double stack. It costs approximately 80% more to run a double deck oven that can only produce 20% of the volume of foods the Millennium can in the same time!
How much does the oven cost?
The best way to acquire the Millennium oven is with the factory-sponsored lease. The lease is a 5 yr. lease with a full service contract that is 100% warranty on parts and labor for the full term of the lease. The monthly payment is determined at time of signing at prevailing rates.
Wow, what a bargain!
If you do any type of volume and are using anything but the Millennium you are losing money. The Millennium was developed to save you money. Due to the ease of use (no spinning or rotating pizzas) a novice can become a seasoned pizza person in no time, therefore you don't have to pay an experienced pizza chef to operate the oven. The labor savings alone is can save you thousands per year, and let's not forget about the savings in gas. You will experience a major increase in production in your establishment.
Who is using the Millennium?
The Millennium has been adopted by organizations such as American Airlines, Disney, Penn State University, Dow Jones Eatery, Georgia Dome, Commerce Casino, Storyland Theme Park, Merck Pharmaceuticals, Copper Mountain Resort, the Delmonico Hotel. Obviously these operations are concerned about operational savings, production capabilities and quality of product, and quite frankly there isn't a product that addresses these issues more effectively than the Millennium.

Do large multi-toppings bake slower?
No. Most pies cook in under 2 minutes.
Do deep-dish pies bake as well?
The Millennium is incredibly fast and will cook virtually anything 300% to 400% faster than most ovens, but it is not a magician. The average deep-dish pie that bakes in 20 to 25 minutes will bake in 4 to 6 minutes in the Millennium.
How many pizzas can you bake at a time?
You can bake 5 large pies, 10 medium pies, and 12 small pies at one time.
How many large pizzas can you bake in an hour?
You can bake approximately 120.
What else can I cook besides pizza?
You can cook virtually anything in the Millennium. You can broil steak, chops, fish, chicken, veggies, bake breads, rolls, sausage, meatballs, au gratin, parmesan, sauce, you can even heat sandwiches using our Pannini plates.
Can I cook directly on the deck?
You can bake all dough products directly on the deck. Other foods must either be cooked on a sizzle platter, pannini plate or in a ceramic pot.
How does pizza taste when baked in the Millennium?
The Millennium is a real brick oven that has a real brick oven taste, so one thing we can promise you is that everything tastes better when cooked in the Millennium.
Do I need a pizza chef to operate the oven?
No. The oven is very user friendly. The Millennium's Stay Hot Deck is unique in that there is no need to spin or rotate pizza due to cold spots, therefore this oven was designed for entry level users and professionals.
Do you have to use the bottom burner all the time?
No. Once the deck reaches the users preferred cooking temperature, the electronic thermostat automatically regulates the bottom burner so your cooking surface remains consistent for optimum productivity.
Do you have to use the flicker flame all the time?
Yes. The radiant burner the deck burner and the Flicker Flame are required for a golden brown pizza crust.
Do I need specific training on the oven?
The factory requires an onsite use and maintenance seminar.
How much does the use and maintenance seminar cost?
It is included in the price of oven. This will includes airfare, hotel accommodations, food, technician fees, training, insurance and tuning of the oven based upon your installation.

How hot does the deck get?
The deck operates at temperatures of 550 to 700 degrees the cooking chamber approaches 1200 degrees. Most operations keep the deck temperature at 550 to 600 degrees fahrenheit.
How long does it take for the oven to get hot?
Approximately 1 hour or less for the oven to get to temperature.
Does the outside of the oven get hot?
No. The oven is a little warm on the sides but will not burn you unless you touch the oven door.
How do you clean the deck?
Spills virtually vaporize in the Millennium. You simply brush the deck occasionally. No salting or scrubbing is necessary.

How do I install my oven?
Your local equipment riggers or licensed mechanical contractors can install the oven.
How much does installation cost?
Installation costs are approximately $500 to $1,000.
How long does the installation take?
Approximately 4 to 6 hours for in a one-story building.
What is required for installation?
You need an 1 1/4" gas line for natural gas or LP gas, a 110 electrical outlet and a 6" flue.
Do I need a permit?
Local codes dictate this. The Millennium is a moveable piece of equipment on castors and is not built into the building and should not require a permit. However the 6" flue may.

Why should I purchase a Millennium 2000 Carousel Brick oven?
In order to match the production capabilities of the Millennium, you would have to spend well over $50,000. Additionally, at just 25k to 50k Btu's, the cost to operate the Millennium is negligible compared to other ovens, not to mention the savings you will enjoy by eliminating the hassle of buying a hood. Your labor costs and air conditioning bills should be substantially less. When all is said and done, the Millennium shares no equal.
How long does it take to receive the Millennium after I place the order?
Standard production time is 4 to 6 weeks, however it depends upon the workload of the factory at the time the order is placed.
